Chantals New York Cheesecake with Strawberry Sauce

Ingredients (Strawberry Sauce Recipe Follows)

12 Graham crackers, crushed

4 Tablespoons butter, melted

4 (8 oz) packages of cream cheese

1 1/2 cups white sugar

3/4 cup milk

4 eggs

1 Cup sour cream

1 Tablespoon vanilla

1/4 cup all purpose flour

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan, and double wrap with aluminum foil to keep water from the water bath out.

  • In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.  Do not pre cook crust.

  • In a large bowl, mix cream cheese with sugar until smooth. Mix everything else as little as possible.  Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.

  • Cook in water bath.  Use a roasting pan and fill with 1/2 - 1 inch of hot water.  Bake in preheated oven for 1 hour. DO NOT OPEN OVEN DOOR once it is in oven, not even to peek.  Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Strawberry Sauce

Strawberry Sauce Ingredients:

  • 1 lb Strawberriesrinsed, hulled and thickly sliced
  • 1/3 cup granulated sugar
  • 1 Tbsp lemon juicefrom 1/2 Lemon

Instructions

How to Make Strawberry Sauce:

  1. In a medium saucepan, combine sliced strawberries, 1/3 cup sugar and 1 Tbsp lemon juice. Place over medium heat and bring to a boil, stirring occasionally. Strawberries will release juice without any mashing required.
  2. Reduce heat and simmer 20-23 min or until sauce is thickened, stirring occasionally. Remove from heat and cool to room temperature. Keep in mind sauce will thicken up slightly as it cools and even more with refrigeration.
